Peach Spinach Salad with Crispy Bacon & Parmesan

Hi Friends! I’m so excited to be sharing our absolute favorite summer salad with you today! I don’t usually share “recipes” but this salad is so darn good, I wanted to tell you all how to make it before the beautiful summer ingredients are gone for the season! This is a super simple and delicious peach spinach salad that is often requested here at Crow Hollow Ranch. It only takes minutes to make and can be served alongside any protein or as a meal itself!

This salad has so many yummy ingredients, it’s hard to go wrong. I basically put together all of my favorite salad toppings and added in some peachy summer goodness to create a fresh and delicious salad that is always a winner!

You can substitute any green that you like in place of the spinach. I have used fresh garden lettuce and arugula in place of the spinach and it is equally good.

I have also replaced the walnuts with pecans or candied nuts.

The bacon and parmesan add the perfect amount of salty flavor to this salad, but if you want a vegetarian version, just skip the bacon and add more cheese!

I have used several types of olive oil and vinegar dressings on this salad. The simplest is a good olive oil drizzled with an aged balsamic or balsamic glaze. If you have access to an olive oil and vinegar store, I absolutely love mixing olive oil with a Sicilian lemon white balsamic vinegar to dress this salad!

I often make this salad for lunch and serve it with some fresh, crusty bread.
